Sweet Potato Risotto

Oh my gosh, guys… this is a MUST TRY recipe!!! HOLY YUM! :mrgreen: It’s from the November 2008 issue of Real Simple magazine.

Sweet Potato Risotto

I rarely follow a recipe exactly, but I did tonight… and WOW! Yay for leftovers!!! Mal doesn’t like sweet potatoes, so you guys will be seeing these babies for a few days to come. Let’s hope I can get creative with them! :D

    Looks great. I love risotto. I always thought it didn’t make good leftovers though? Let us know how they taste the next day!

    wow, even in fry form? (mal not liking sw potatoes)

    that risotto looks fabulous :) you could try risotto cakes, or add a little cheese and binder to make balls?

    OMG! Risotto is my <3 , (p.s.: runeatrepeat, you don’t like risotto?!?!?! :-O ) my favourite type of risotto is mushroom risotto, I ALWAYS ALWAYS get them when I go to the restaurant, so DELISH!!!!! Phew *breathe* ok, so … do you think parmesan cheese is a MUST in risotto?? And did you use those cheap kraft parmesan (which is what I have in my pantry :oops: or did you use the gourmet ones??     I love risotto and it’s my standard rice dish. I tweak it to include left over meats, left over veggies, whatever. In fact, I made this with an extra piece of squash I had in the fridge. Once you have the recipe down, it becomes second nature and you can make it a hundred different ways! Yummmy

    I came across your blog a few days ago and absolutely love it. I saw this recipe you made for Sweet Potato Rissoto and you had given it such a rave review that I had to try it for dinner last night. I absolutely loved it! Great taste, nutritionally sound, and REAL SIMPLE. I’m a working grad student and it fit perfectly into my schedule.

    Your blog is great and good luck with Lose the Dough – sometimes calorie counting for a few days is what you need to realize your minor slip ups, give it a shot again and I’m sure you’ll be seeing the pounds drop right off soon enough!
