Super Sunday Salad

I love it when salads have a ton of variety and each bite is a flavor surprise. This afternoon’s lunch was one of those lovely salads! Every bite kept me guessing! :)

In the mix:

  • Arugula
  • Spinach
  • Carrots sticks
  • Red onion
  • Maple-roasted brussels sprouts
  • Grape tomatoes
  • Prunes
  • Balsamic vinegar

On the side, clementine pieces… 

Salad + clementine with a Lindt chocolate truffle… and (not pictured) a chocolate-covered biscotti, which was another Christmas stocking stuffer. 

Workout

After lunch, I squeezed in a quickie workout: 3 mile run on the treadmill + 15 minutes of upper body free weights. It was a short and sweet workout. 

Run stats:

  • Distance: 3.0 miles
  • Time: 25:57 
  • Pace: 8:39 min/mile
  • Calories: 294 

Snacks

I’m headed to Healthworks in just a few minutes, so I packed a couple of snacks for the road: a peanut butter and carrots cake jam sandwich and Yogi peppermint tea to make at work. I’ve really enjoyed working at HW over the past few months, but honestly, I am psyched to have some more free time again! Two shifts to go! :D Do you have a part-time job? What do you think of part-time jobs?

    I used to work part time, also at a gym. I did the opening shift (5 – 8 a.m.) before heading to my full time job. It was great because I made a little extra $$ and got a free membership…but ultimately I quit because a) I was too tired all the time, and b) I got KILLED at tax time! Because my part time checks were pretty small, not much was taken out in terms of taxes….and Uncle Sam made up for that on April 15 :(

    I have a part time job as a waitress. I don’t like the fact that I have to work 2 jobs, but the extra money is nice. Tips are cash in pocket, so I have my gas money and fun money whenever I need it.

    I used to have two jobs and the extra money was nice, but eventually I was so exhausted (and I missed actually seeing my husband!)

    ooh prunes in a salad!? sounds delish to me, great textures! i have a part-time job because i am a full-time student, working in the BC endowment. it’s fun and good experience…plus it’s great on the wallet ;) i just read an article in SELF magazine that showed great workout spots in the country and it listed Boston’s Healthworks!!

    Your salad looks amazing!

    I did have a part-time and full-time job at the same time, and it wasn’t too bad. It was really only a few hours a week and I got to do my homework when it was slow. But then again, I did work for family, so that may have something to do with it! Good luck on one of your last shifts!

    Delicious looking salad! I used to bartend 3 nights a week and twice on the weekends whilst also working for an advertising firm. I would work my day job 9-5, then bartend right after til around midnight. The money was great, but at the end of the day, it’s so much better to have your time. Enjoy your second to last shift!
