Guest Blog: Gluten-Free Barney Butter Cookies

Hello Everyone! My name is Kristi from Healthy Living and I was one of the winners from Tina’s Barney Butter contest. I know it has been a long time since the contest, but I have been trying Barney Butter to see what I could use it for! So hold on to your seats, because this girl has been pretty busy!

The first thing I did with my Barney Butter was ate it right out of the jar! It was like a little taste of heaven! Not too salty, not too sweet, just perfect!!! Then, I thought of one of my favorite treats while growing up: Celery and Peanut butter. So, I thought why not try it with a piece of celery? So, I did and it was actually better than peanut butter! There is just something about the creaminess of Barney Butter that leaves you feeling satisfied!

 

Since Barney Butter passed my first round of testing, I decided to try it out a little bit more! So, I tried it on waffles! Great Combo!!! The crispiness of the waffles and the smoothness of the Barney Butter have a great texture and go really well together!

 

Then, on another day, I decided to try it with some oatmeal. I wasn’t sure if the Barney Butter would get lost in my oatmeal because I had so many other things going on with this bowl. But, as you probably guessed, it did not get lost!!! It actually stood out a little more than the pumpkin I used for this bowl! Again, Barney Butter didn’t let me down!!

And, I am sure most of you have heard of Sammie’s “mess.” So, I made one using Barney Butter instead of peanut butter. And, all I can say is WOW!!!! I really noticed the almond flavor come out in the “mess.” It’s so weird, because I actually tasted the Barney Butter in every bite! I thought it would stay together, but it spread nice and evenly throughout the “mess.”

And, for my FINAL test of Barney Butter, I used it for baking cookies!!! I found a few recipes for Peanut Butter Cookies and wanted to try Gluten Free cookies. So, I did!!! For these Gluten Free Barney Butter cookies, you will need:

  • ¾ cup of Barney Butter
  • ¼ cup of Peanut Butter
  • ½ cup of packed light brown sugar
  • ¼ cup of egg beaters or 1 whole egg
  • 1 ¼ tsp of baking soda

Preheat the Oven to 350 degrees.

First, you take the Barney Butter, Peanut Butter and brown sugar and place it in a bowl.

Mix all 3 ingredients together until blended well.

Once blended, add the egg beaters and baking soda and blend again until a dough forms. Note: this is not your typical dough, it is very soft, but will form into the cookie you need!

When the dough is ready, form into little balls and place onto cookie sheet 1 to 1 and ½ inches apart because these cookies will spread! When cookies are placed on sheet, make the fork marks like you would on regular peanut butter cookies.

When ready, place cookies in oven for about 7 minutes. Make sure to watch them! They do get pretty thin, do not worry!!!! They are supposed to get thin!!! When they are finished, remove from oven and place on cooling rack for about 15 minutes and enjoy!!!! Note: you will have to do this a few times because this actually made 35 cookies!!!

These cookies are the best cookies ever!!! One of them will fill your peanut butter craving in a heart beat!!! The combo of peanut butter and Barney Butter is great! It’s a very powerful nutty flavor and is sure to be a huge hit for anyone who tries them!!! And, not to mention they are pretty healthy too!

But, I hope you can see that Barney Butter really can be used in many ways. So expand your horizons and try some Barney Butter. Trust me you won’t be disappointed!!!!

    we LOVE the barney around here—-especially the travel tubes.

    I always have those in my diaper bag when we head out and have been rumored :) to squeeze em directly into my mouth at stoplights.

    I love using exclamation points, I think it puts me in a better mood. But, to answer your question, yes they are soft anc chewy!!!! :)
