Christmas Morning Muffins

Christmas Morning Muffins
Makes 12 muffins*

Ingredients:

1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/3 cup canned pumpkin 
1/4 cup molasses
1/2 cup sugar
1/2 cup shredded carrots
1/3 cup raisins
1/3 cup chopped walnuts (optional) 
1/3 cup hot water

Directions:

  • Preheat oven to 325*F.
  • Grease and flour 12-cup muffin tin or line with paper liners.
  • Combine flour, baking soda, cinnamon, nutmeg, ginger, and salt in a medium bowl.
  • Next, add pumpkin, molasses, and sugar, followed by shredded carrot, raisins, and walnuts (optional). Mix well.
  • Mix batter until just moistened, then add hot water and mix until fully blended.
  • Divide batter evenly among muffin cups.
  • Bake for 12-15 minutes or until an inserted toothpick comes out clean.
  • Cool on wire rack.
  • Enjoy! :D
  • Mmmmmm… Christmas morning muffins! What a perfect name for this gingerbread-y treat! :D These muffins would be a wonderful addition to a Christmas morning brunch or just an easy, low-key breakfast. They’re moist and sweet with a hint of spicy gingerbread, and include many nutritious ingredients (pumpkin, carrot, raisins, and walnuts) to start your morning off right! :)

    *Note: I have one small gripe about these muffins: They’re a tad on the small side. The batter ended up filling the muffin cups only halfway, which made them short and “disk-like.” If you would like full-sized muffins, double the recipe or just use a mini-muffin tin instead.

    Oh yea, if you would like, add a little powdered sugar to the tops of the muffins. I didn’t have any, but I think it would make an excellent addition!

      These little babies look really good. I want to try them now !!! By the way I just read on Broccoli Hut blog that one of my favorite sandwich thins ( Arnold Select ) has sucralose In them . I just bought some more of them. I guess I should of read clear down the end of ingredients. :(

      Those are adorable! Maybe you need to put a bunch of cream cheese frosting in between two of them and make a sandwich. Just a thought…

      While I was baking today, Giada was on and she was describing this carrot cake that she would gift out during the holidays. I remember thinking to myself, “Hm… never tried a carrot cake before, but don’t really want to bake an entire cake.” How perfect that you made muffins! They are adorable!
