Rice and Beans

Mal and I have been talking about having rice and beans for dinner for weeks now. However, I always feel like rice and beans are a “last choice” for a meal… like, we’re out of food, what’s in the cupboards? Rice and beans! But, tonight was a different story… it was R&B for dinner! 

To my rice and beans, I added a little Tabasco sauce and some broccoli covered in pink pesto sauce on the side. In the end, I mixed it all together. 

Dinner from above with a glass of Pinot Noir…

Danielle and I split the last of the Clos du Bois bottle that I opened on Friday night. 

Afternoon Snack 

In my Oikos (plain flavor), I added a bunch of sliced strawberries and blueberries. Sadly, the California strawberries lacked flavor. :(

Oh, how I miss fresh berries! Spring can’t come soon enough! 

I’m baking something wonderful for the BSI contest tonight! Be back later with a pumpkin-themed recipe! :D

    Tina,

    I saw on a cooking show this weekend that you should leave the skin on the carrots because, like most other veggies/fruits, that’s where a lot of the vitamins are. The cook said to just wash the carrot, and it’s fine to eat. I don’t know the validity of this, but I ate mine today, skin and all, and it didn’t taste any differnt. Just a thought :-)

    The beans and rice look yummy!Call me crazy, but I’m from New Orleans and I don’t like red beans and rice- but I totally like beans over rice, like your dinner. I think its the roux the beans are made in that I am not crazy about? Who knows!
    Can’t wait to read your pumpkin recipe!

    Looking forward to the recipe!!!!I love pesto sauce…on brocolli sounds great! i can’t wait for the spring season..berries, berries, berries! the blogosphere will be filledd with beautiful colors.. of berries of all types ;-) !

    agree with you Tina, that we tend to have rice&beans when we have no fresh food. But it’s actually very nutritious and yummy~~~

    thought i would give you a twist on the regular rice and beans recipe that is super easy and awesomely delicious (not to mention economical!)… mix together a can of black beans and italian spiced tomatoes, add a pinch of cinnamon and hot red pepper flakes as desired and let cook down till most of the liquid is evaporated and the beans thicken. in the meantime make the rice and add some light coconut milk at the end of cooking. serve the beans and rice alongside each other and mix while eating… this combo together is now one of my dad and boyfriend’s favorite meals, soooo goooood!

    Per your recommendation I tried Oikos (honey) yesterday for the first time SOOO good! I looked for barney butter but couldn’t find any :( Would it be near the peanut butter?
