Guest Post: Pineapple Pear Chicken

I am pretty excitied about doing a guest post on Carrots ‘N’ Cake. This is my third month blogging and I have been following Tina and her Carrots ‘N’ Cake blog since I started. To be honest, I was somewhat intimidated to prepare a post for Carrots ‘N’ Cake that it took me three recipes before I found one that I thought would interest her readers. This meal is for everyone out there that lives a hectic lifestyle but still desires to eat healthy, hearty meals. I promise this dish is ready from start to finish in 45 minutes (which is not bad). It’s no Rachel Ray but hey it’s just Zesty.

Pineapple Pear Chicken

Ingredients

3 Boneless Skinless Chicken Breasts
1 Onion
1 Can Pineapple Tidbits
1 Pear(Diced)
2/3 Cup Brown Sugar
1/3 Cup Ketchup
1/4 Cup Water
1 Tbsp. White Vinegar
2 Tbsp. Hoisin Sauce
1/2 Tsp Red Pepper Flakes
1 Tbsp. Soy Sauce
1 1/2 tbsp. Cornstarch
1 Tbsp. Olive Oil
Green Onions

Method

Preheat oven to 350 Degrees F.
Turn burner onto medium-high heat and add the olive oil to a sauce/sautee pan.
Season the chicken with salt and pepper.
Sear the chicken breasts on both sides in the sautee pan to lock in the juices

Chop onion coarsely and add to roasting pan.
Combine the remaining ingredients except the green onions and cornstarch into a bowl and mix well.

Once chicken is seared, transfer to the roasting pan with the onion.
Pour the sauce over the top of the chicken and cook for 30 minutes covered
Remove from oven and place roasting pan on the stove over medium heat.
Dissolve cornstarch in approximately 1/2 Cup of cold water, then pour into sauce.
Gently thicken the sauce by bringing to a boil.
Serve the Chicken and sauce over rice or noodles
Top with Green Onion
Enjoy!

Zesty Tip: When using cornstarch or any thickening agent, it will not come to its full thickening consistency until it has reached a boil and also remember to avoid lumps in your sauce be sure to mix the thickening agent in cold water in a seperate bowl before adding to your sauce.
