English Muffin Pizzas

Tonight’s dinner was one of my favorite easy meals: English muffin pizzas! They’re always so good, right?! :) Tonight’s were made with Thomas whole wheat English muffins, marinara sauce, shredded cheddar, onion and green pepper slices.  

On the side, I also had some broccoli covered in pink pesto sauce

Dinner was sort of on the small size this evening, but my stomach has been (understandably) “off” all afternoon. After dinner, I snacked on a piece of banana bread with Barney Butter (not pictured), which seemed to finally settle my stomach. I think that I am almost back to 100%! :)

Sorry for such a brief blog this evening. I’ve been in slow motion all day, so I need to catch-up with my to-do list and get myself organized for the upcoming work week. Ooooh, the Sunday Night Blues! :( Blah. However, in a little while, Mal and I are making a weekend itinerary for our trip to NYC, which should be really fun! The possibilities are endless, and you guys gave us SO many recommendations, I don’t know where to begin! The only definite for our weekend is a visit to the Union Square farmer’s market! It sounds like something that I will totally LOVE!!! Thanks, guys! :D

    English muffin pizzas (a family favorite!!) + broccoli with pesto sauce = holy yum ;-)

    I haven’t had an english muffin pizza in ages! Greatest quick and easy meal ever! I have them topped with egg, cheese and salsa fairly often, but I have to do it minus the egg and with marinara instead one of these days. Yum yum.

    Sounds like the perfect ending for a hungover day! I havent had english muffin pizzas in ages!! So good! Planning trips is the best…it’s my favorite part :)

    Nicest presentation of english muffins *I’ve* seen! W/the little bell peppers and everything! I just mush up stuff in a bowl and eat it…I should work on that lol!

    what a great idea to make pizza with english muffins! I love pizza and cheese, but dread having to make the dough or go out to buy the pizza dough.
