Creamy Cranberry Oats

Good morning! I slept in so late this morning– it was fantastic! I love my bed! :D I had the strangest dreams though… the ones where you wake up not knowing if they’re real or not. Even after I got out of bed, I kept questioning if it was a dream or not! So weird. Anyway…

Breakfast was another fun bowl of oatmeal this morning. I tried something new in my oats: low-fat ricotta. It sounds a little strange, but I loved the way the cottage cheese cream-ified my oats yesterday, so I figured ricotta would also be a good addition.

The ricotta was AWESOME in my oats! They came out so light and creamy, and I couldn’t taste the ricotta flavor at all. Just to note: the cranberries and chunky Barney Butter was surprisingly a yummy flavor combo!

Today’s measurements:

  • 1/4 dry oats
  • 1/4 cup cranberries
  • 1/4 cup low-fat ricotta
  • 1/2 crumbled pumpkin-ginger muffin
  • 3/4 cup water
  • 1/2 tbsp pumpkin seeds

Question of the Day

Here’s an easy one for you guys because you need to save your commenting strength for the contest later this morning! :D

love ricotta!! I bet it gives creamy texture to the oat…. have you tried making pie with ricotta? back home in Argentina, it’s a typical dessert, ricotta and apple pie.

    favorite magazine: healthy/fitness/self

Yum! That oatmeal seems like it would taste like cranberry cheesecake or something. Are those fresh cranberries? I do not like cottage cheese, but do like ricotta…I’ll have to try that.

I’d say my 2 favs are Fitness, and Women’s Health!

I love Oxygen. It does a great job of showing hard core weight training that really anyone can do. The problem with Shape and Fitness is that a lot of the exercise are just plain kooky and a personal trainer once told me “They have to sell magazines every month so that have to come up with new stuff even if it is useless.” But I can’t imagine getting Oxygen forever because the basics are the basics and after that it gets repetative. I like Shape for the articles.

    Bridget,

Yep, they were fresh cranberries right out of the bag. I was excited to see them at the grocery store the other day and snapped them right up! I love cranberries!!!

If it wasn’t for Women’s Health magazine, I would never have found out about all of the great foods that are on the shelves that taste excellent and are good for you! 100 calorie pack muffins, fiberone bars – you name it they told me about it!

Women’s Health, hands down favorite in my book. It isn’t as airbrushed and fake as some of the others like Shape and Fitness. The females pictured actually have muscles. Oxygen is another good one.

Women’s Health, Oxygen, and Health. I like health because it has all the new studies that are being done in the medical field right now. I used to read Shape and Self, but then realized I really didn’t fit the profile of their target audience. I feel like WH at Oxygen are more targeted towards athletes, vs. people looking for diet tips.

    Contest..!? I’ll be watchin ;)

I really love Runners’ World – as I’ve been training for my half-marathon it’s given me great nutrition tips, taught me about tapering, and really motivated me!!

Other than a mag. strictly for runners, I really like Self because it focuses more on all-around wellness than just diet and exercise.

I love Women’s Health! The other seem to be really repetitive and heavy on “fluff”. I like that Women’s Health writers are sarcastic and funny, and I always learn stuff about the planet or something unrelated to fitness, without having to wade through too expensive clothing and “how to pick out the best jeans” articles that show up in EVERY issue.

This one isn’t my favorite, but I really enjoy reading Men’s Health. It has a lot of great information without a lot of “fluff” you find in women’s magazines. Plus, they have really hard workouts in it! I think it’s a solid magazine.
I also like Shape and Women’s Health
