Hardly A Day Off

Woah, nelly! It’s been a busy one! I had today off from my full-time job, but I’ve spent almost the entire day working around the apartment (cleaning, laundry, etc.) and planning for the upcoming week. I also have to work at Healthworks tonight, so it was hardly a day off! Now, I’m really glad that I enjoyed myself so much this weekend! :)

Breakfast

I couldn’t decide what I wanted to eat for breakfast this morning. We went grocery shopping the other day, so now we have too many food options! After some debate, I finally decided to have a few different foods for breakfast: an egg, banana with Barney Butter, a leftover Pumpkin Spice Pancake with Smart Butter, and coffee from Dunkin’ Donuts with milk and agave nectar. 

Lunch

Lunch was the same deal: a little of everything. I started with a bowl of leftover Annie’s Mac & Cheese. 

I finished-up with cucumber slices, apple slices, and canned pumpkin mixed with cottage cheese. Lunch was very filling! Let’s hope it holds me over until I get home for dinner later tonight. 

Alright, guys… I’m off! Another crazy week ahead!

    Oh man busy crazy week for all of us! I need a vacation! Hang in there little lady I have my fingers crossed the week goes by fast! You cottage cheese looks yum’o I would not have thought to add the pumpkin, is it sweetened or just the puree?

    Thought I should let you in on this..

    According to my secret insider information, JP Licks is going to have Carrot Cake ice cream on their menu after as of October 13th, but only for a very limited time. I’d hop on that right away (as is my plan for tonight!) :D

    Hey Tina,
    First time commenter here. First of all, I want you to know that i LOVE your blog and how fun it is! I like the fact that you don’t stick to such a strict healthy diet and manage to eat sweets and splurge at times, yet maintain such an awesome physique!
    I can see that you are a lover of peanut butter and I was wondering what your favorite brands are. I do not have access to Whole Foods or Trader Joe’s, but there is a Publix and Fresh Market nearby, as well as generic supermarkets that sell Smuckers all natural, Maranatha, PB and Co…what do you think of those peanut butters. Could you list some peanut butters that you like? Sadly, there is NO almond butter anywhere where I live (florida) so that is not an option.
    Anyway, great job and enjoy your week!

    I don’t know how you do it, Tina! I used to waitress on weekends and hold my finance job during the week and I think I only lasted a few months. It’s hard not to get any days off!
    Question for you: when your meals are more like a bunch of snacks, are you more or less satisfied?

    So I’ve been reading your site for awhile now and when i read your post about cottage cheese and pumpkin, I tried it tonight and it was so delicious. I dressed mine with splenda and honey with half pumpkin and half cottage cheese. It was heavenly!!!! YUM!!!

    It’s unsweetened canned pumpkin. I didn’t sweetened it up yesterday, but sometimes, I will add a little honey to the mixture.

    Yes, it’s very cheesy! The box that we used was white cheese with whole wheat shells, so maybe that’s why it’s tough to see the cheese goodness? Plus it was leftovers, so they never look as good as the original!

    Thanks for your nice comment! :) My favorite peanut butter is the Teddie brand. It’s all natural and delicious! The Super Chunky variety is the best!

    Good question! It depends on the foods that I choose. If I pick a well-round group of snacks to make up my meal, I find that I am just as satisfied as if I ate a regular full-sized meal.
