Guest Blog: Beth T Reviews Barney Butter

Hi Carrots ‘n’ Cake readers! When I got my free jar of Barney Butter my immediate thought was that I wanted to bake something with an almond butter flavor. I don’t normally bake with natural-style nut butters; the oil separation makes them a little runnier than your average jar of Jif or Skippy, and I’ve gotten mixed results when I’ve tried to use natural varieties.

However, Barney Butter is a no-stir almond butter and I decided the consistency was so close to traditional PB, it would work beautifully in a cookie recipe! I decided on this recipe from Food Network for Peanut Butter Sandwich Cookies (http://www.foodnetwork.com/recipes/dan-smith-and-steve-mcdonagh/peanut-butter-sandwich-cookies-recipe/index.html). I followed the recipe to a T, but used Barney Butter in place of peanut butter.

This dough is really interesting – much stickier than traditional PB cookies! It’s also similar to Nutter Butters with the addition of oatmeal. I decided to make half of the cookies as-is, and half with slivered almonds pressed to the top for crunch.

While the cookies were baking, I decided to let another family member taste test the Barney Butter: my dog, Buddy! Sorry Tina, he’s not a pug, but he’s pretty darn cute….and he loves peanut butter. The Barney Butter was also a big hit!

When the cookies came out of the oven I decided to leave some plain and turn the rest into sandwich cookies with more Barney Butter and a little raspberry jam. The recipe calls for a delicious-sounding molasses PB buttercream, which I might try next time.

Overall, I thought they were FANTASTIC – chewy and with a mild, less salty flavor than a traditional PB cookie. I will definitely buy Barney Butter in the future, probably using the smooth for baking and the chunky for toast and other toppings :) Thanks for having the contest so I could try it, Tina!

    No, I live in CA, but I LOVE Madison! My husband and I visited there when he was looking for grad schools.

    The cookies look delicious! I’d love to try BarneyButter, even though I’m not the biggest fan of almond butter in general. But this stuff seems to be better than the rest…Great review!

    I love UW…it’s a great school with lots of spirit! The campus has so much character, and there is so much to do in the city!

    Hi, great review! Looks delicious! I spent 8 precious dollars on Barney Butter last night but got excited when I found it in the store and it definitely lived up to Tina’s high expectations, thanks! :-)

    Hello Beth,
    Your cookies looks delicious. I am a big fan of Barney Butter since I first tried it. Now it’s on my grocery list every week. Luckily I live in California and can get it from Whole Foods. Thank you for sharing your cookies pix
