Cocoa Oatmeal Cookies

Baking last night was so much fun! And the end result made it even more fun! :)

I made a batch of oatmeal cookies with cocoa and canned pumpkin, which came out sweet, rich, and moist. I ate at least 3 or 4 of these last night! :)  

Cocoa Oatmeal Cookies

Makes 24 cookies

Ingredients:

2 cups oats
3/4 cup brown sugar
1/4 cup sugar
1/2 cup all-purpose flour
1/4 cup powdered cocoa
1/2 cup canned pumpkin
1 egg
1/2 tsp vanilla extract
1 tsp baking powder 

Directions:

1. Preheat oven to 350*F
2. Combine all ingredients in a large mixing bowl.
3. Use a tablespoon to portion batter onto a greased cookie sheet
4. Baked for 12-15 minutes until cookies are cooked through
5. Cool on a wire rack and enjoy!

    these look so yummy. i feel like i could pop ten in my mouth. chocolate and pumpkin sounds like a wonderful combination.

    yummmmy. those look amazing!! i like how theyre small… having multiple of small things is much more satisfying to me than 1 big thing ;)

    question… is it just my googlereader or does anyone else notice that CNC doesn’t update as fast as other blogs????

    Tina, I made these cookies yesterday but they seem like they are missing something…did you measure your brown sugar packed? I was so excited to try them but they tasted kind-of bland and dry :/ On another note though, we LOVE LOVE LOVE your oatmeal raisin bars!

    I agree. They needed something else. They weren’t as sweet as I expected. I guess they needed more sugar/brown sugar? Or some chocolate chips?! :)
