Cocoa Oatmeal Bars

Somehow, I manged to squeeze in a little baking this afternoon. I was in the mood for chocolate, so I altered one of my favorite recipes (Oatmeal Raisin Bars) to include some cocoa powder. 


Cocoa Oatmeal Bars
Makes 9 bars
 
Ingredients:
2 cups dry oats
3/4 cup all-purpose flour
1/2 cup packed brown sugar
4 tsp cocoa powder 
1/8 cup sugar
1/2 cup canola oil
2 eggs
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup peanut butter and chocolate chips
 
Directions:
1. Preheat oven to 350 degrees. Spray 8-inch square baking pan with non-stick cooking spray. 
2. In a large mixing bowl, combine ingredients until smooth. 
3. Spread batter in prepared baking pan, and bake for approximately 25-30 minutes until bars are cooked all the way through.
4. Let bars cool completely in pan before cutting.

    I did the same thing over the weekend! I took a oatmeal cookie recipie substituted applesauce for 1/2 the butter, whole wheat flour for flour, splenda sugars for both sugar and brown sugar and added dark chocolate chips. If you do the butter substitute you have to make bars instead of cookies. The other substitution makes them really light, fluffy and cake like.

    I think I am going to add some cocoa to my pumpkin oat bars. Thanks for giving me this idea. Of course, I will have to try your recipe too!

    Have you ever tried making these without eggs? They look delicious but I’m vegan :) I can experiment myself, just wanted to save myself a catastrophe if you’d already tried it!

    I haven’t, but next time I will try. I was thinking about trying canned pumpkin in the recipe and see what happens. It could be really delicious with the raisins (but minus the egg)!

    I totaled the calories and I got 445 each square. I have a question about the recipe is it 1/2 cup pb and choc chips?

    Thanks for adding up the calories! 445 calories is quite a lot, but the squares are really big and totally worth the splurge. The 1/2 cup of peanut butter and chocolate chips is actually a mixture of both– so 1/4 cup of chocolate chips and 1/4 cup of peanut butter chips.

    Oh I don’t care about the calories but I wanted to make sure about the pb and chocolate chips because that will change the number. Thanks for letting me know. I saw your squares and really wanted to try them.
