I made these cookies for a housewarming party of a friend, but I didn’t have peach. I substituted canned pumpkin for the peach and it was amazing (and seasonal)! Thank you!

Hi, I realize this is an old post, so it might be a long shot to get a reply, but I was wondering….have you ever tried making these into cookie bars? Do you think they could be, or are they too thin for that? P.S. They look delicious!

They do look divine! On the Weight Watcher Scale that’s only about a point each. Not bad if they’re delish & give you that fix u need for a good cookie!
