Fancy Grilled Cheese Sandwich

Get ready for another quick post! (I apologize, again.) My sister and I have a facial appointment later tonight (the last one before the BIG DAY), and I need to hit the road very soon.
Tonight’s dinner was so yum! It was pretty much a fancy-schmancy grilled cheese sandwich.
Cannellini Bean and Gruyere Grilled Cheese

Ingredients:
Makes 4 servings
1 can (15 oz.) cannellini beans (drained and rinsed)
1 tbsp Dijon mustard
2-3 tbsp water
8 slices whole grain bread
Gruyere cheese (or Swiss, Jarlsberg, etc.)
Olive oil
Directions:
1. Puree beans in food processor. Add tablespoons of water as needed.
2. Add Dijon mustard to bean mixture. Blend until smooth.
3. Spread bean-mustard mixture on one side of bread and place slices of Gruyere cheese on the other.
4. Coat frying pan with olive oil, turn on medium-low heat, and place sandwich on skillet until bottom is golden brown (approximately 3-5 minutes), then flip sandwich and cook until cheese is melted.
***Variation ideas***
  • Add raw spinach leaves to sandwich
  • Add freshly pressed garlic to bean-mustard mixture
  • Instead of whole wheat bread, use freshly baked French bread

Afternoon snack: Stonyfield peach yogurt with Kashi Go Lean cereal… I finished off the bag.

When I arrived home from work, I was starving! I ate a spoonful of peanut butter and a Baked Oatmeal Snack Bar. It was one of those “walk-in-the-door-stuff-my-face-moments.” It happens.

    That just reminded me that I have a gift certificate to a spa that I have never used! Ah thanks for the reminder ;) haha

    That is such a good idea for the sandwich — I never thought about throwing in beans!

    I agree, what a great idea to put pureed beans in a grilled cheese sandwich! Sounds very gourmet and healthy at the same time. And the pictures were to die for–I’ll definitely have to try this.

    It’s a Tina “original,” but the idea came from a recipe that I saw in a magazine. I don’t remember which one though.

    Yep, I think you’re right! I’m an avid Self reader, so that’s probably where I got it from. You should definitely give this baby a try! So yum!
