Good morning! I’m greatly enjoying my birthday so far– I slept in, went for a run, now I am sipping a Starbucks iced soy latte, and Mr. Mal is making blueberry pancakes for breakfast. A fantastic start to my birthday!
Again, I apologize for the lack of photos. I’ll take a few with my camera phone this morning.

Pumpkin-Peanut Butter-Chocolate Chip Muffins
The pumpkin-peanut butter-chocolate chip mini muffins once again came out wonderful! I ended up eating 3 last night and 2 this morning (before my workout). I have no control around these things! They’re so incredibly delicious! I guess overindulgence is allowed on your birthday, right? 
Just a quick note about the recipe…
I reduced the portion size of some of the high-calorie ingredients in the recipe, and the muffins still came out great! I didn’t even notice the missed ingredients (and calories). My reductions/changes:
- Canola oil: 1/8 cup instead of 1/3 cup
- Sugar: 1/2 cup instead of 1 cup
- PB and chocolate chips: 1/2 cup instead of 3/4 cup
Workout
Today’s run was one of my favorites: 45-Minute Treadmill Workout. I love the variation– it makes you work hard and keeps you interested. The walking workout is great too– it really works your buns!
